[UPDATE] We used a Coleman 12V plug-in cooler from where else but Wal-Mart for most of the Alaska trip and it was a total PITA.  It drew to much power to be left on at night and during the day it was unable to keep up with the engine heat that radiated from the floor and the ambient temperature in the van.  That said, make sure it is off the floor with adequate airflow beneath and as far away from the exhaust pipes as possible. We’ve since switched to a 5-day cooler which has been working out much better.

We are in the market for some sort of mini fridge or plug in cooler.   With the research just starting, I’m looking for recommendations.
